2011 Kick Off with Hass Avocados Recipe Contest – Finalist
Recipe Courtesy of Robert H. from Texas, who says "A zesty dip for all sports events. Fresh avocado, black beans and tomatoes pair up with any tail gate BBQ."

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 2 Hass Avocados, chopped
  • 2 Roma tomatoes, chopped
  • 1 (15.25 oz.) can whole kernel corn, drained
  • 1 can black eyed peas, drained
  • 1/2 red onion, diced
  • 1 (7 oz.) jar roasted red peppers, drained and diced
  • 1 can black beans, drained
  • 3 green onions, chopped
  • 1 cup canola (or preferred) oil
  • 1/3 cup red wine vinegar
  • 1 pkg. Italian seasoning

Instructions:

  1. In a bowl, combine avocado, corn, red onion, red peppers, tomato, black beans, black-eyed peas and green onion.
  2. In a second bowl, combine oil, vinegar and seasoning.
  3. Lightly stir oil mixture into vegetable bowl.
  4. Refrigerate one hour before serving.
  5. Salt and pepper to taste
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
