Ingredients:
- 2 Hass Avocados, chopped
- 1 large tomato, chopped
- 1/2 onion, chopped
- 2 ears of corn, oven roasted and kernels removed
- Juice of 1 lime
- Olive oil, as need
- Salt and pepper to taste
- 1 large head of romaine lettuce, chopped
Dressing Ingredients:
- 2 Hass Avocados
- 1/4 cup mayonnaise
- 1/4 cup milk
- Juice of 1 lime
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/2 tsp. cumin
Instructions:
- Preheat oven to 400 degrees. Drizzle olive oil on corn and add salt and pepper. Roast at 400 degrees for 15 – 20 minutes, or until kernels are tender crisp. Cut kernels off corn cob.
- Add chopped lettuce to a large salad bowl. Add chopped tomato, onion and corn kernels. Add avocado and lime juice.
Dressing Instructions:
- Add all ingredients for dressing to a food processor. Turn on high and blend until creamy and smooth. Add dressing to salad and toss if desired.
*Large avocados are recommended for
this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados
adjust the quantity accordingly.
