Recipe Courtesy of Amanda L. from Nebraska, who says "Score extra points with your friends for frying up this tasty treat! These fries are super crunchy on the outside and soft in the middle, creating the perfect tailgating snack."

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 2 Hass Avocados
  • 1/4 cup flour
  • 1 tsp. garlic salt
  • 2 eggs
  • 1 cup panko bread crumbs
  • Vegetable or canola Oil
  • Shredded parmesan cheese

Instructions:

  1. Cut the avocados in half. Pit and peel the outside skin off. Slice into small pieces.
  2. Pour an inch of oil in a saucepan and put on medium-high heat.
  3. Mix flour and garlic salt in one bowl.
  4. Beat 2 eggs with fork and keep in a separate bowl.
  5. Pour a cup of the panko in a third bowl.
  6. Dip the avocado slices into the flour and coat on both sides. Then transfer them to the egg and coat on both sides. Lastly, coat the avocado on both sides with the panko and then drop into the oil.
  7. Allow the avocado to fry until it is a crispy golden brown and remove from the pan. Place on a plate covered with a paper towel to absorb excess grease.
  8. Cover with shredded parmesan cheese for garnish.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
