Ingredients:
- 1 package lime gelatin
- 1 cup hot water
- 2 cups mashed ripe Hass Avocado
- 1 small grated onion
- 1/2 cup mayonnaise
- 1 lemon, juiced
- 5 sprigs chopped parsley
- 1 dash of salt
- 3/4 cup whipping cream
- Chilled cooked meat or seafood to your liking tossed in a little French dressing
Instructions:
- Dissolve gelatin in water, cool in refrigerator until syrupy texture. Beat cream and set aside. Combine all other ingredients (except cooked meat or seafood) in a bowl. Slowly add whipped cream to bowl contents, stir gently. Add syrupy gelatin to bowl and mix carefully. Pour into medium sized ring mold and chill until firm. When ready to eat, unmold and add meat/seafood to the center.
*Large avocados are recommended for this recipe. A large avocado averages
about 8 ounces. If using smaller or larger size avocados adjust the quantity
accordingly.
