Recipe Courtesy of Tresa H. from Oklahoma, who says "With bacon, avocados, tomatoes, bread cubes and the yummy avocado dip, Avocado Pylon Kickers are a touch down every time! They are so simple to put together yet so impressive! Something magical happens when you grill a Hass Avocado! The Hass Avocados that are a little harder are easier to get on the skewers."

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 1 large baguette cut into 48 – 1 inch cubes
  • 1/4 cup olive oil
  • 1 Tbsp. kosher salt
  • 6 Hass Avocados
  • 2 lemons, juiced
  • 36 slices precooked bacon (microwave ready)
  • 48 cherry tomatoes
  • 2 cups mayonnaise
  • salt and pepper
  • 12 (12 inch long) wood skewers

Instructions:

  1. Soak skewers in water for at least 30 minutes.
  2. Heat grill.
  3. Pour olive oil over bread cubes, sprinkle with kosher salt and mix.
  4. Chop 4 1/2 avocados into 1 inch cubes; pour 1 Tbsp. lemon juice over avocados.
  5. Weave bacon onto skewers in and out around other ingredients in this order; bacon, bread then loop bacon back through, tomato, loop bacon back, avocado and continue using 3 strips of bacon and 4 each of other ingredients on each skewer.
  6. Grill over medium heat for 3 minutes each side or until bacon is slightly crispy and grill marks have been achieved.
  7. In blender mix mayo, 1 Tbsp. lemon juice and 1 1/2 avocados (and any pieces of avocado you have left over from skewers) until smooth, salt and pepper to taste. Serve dip in several of the Hass Avocado shells for a great presentation.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
