2010 Kick Off with Hass Avocados Recipe Contest - Runner-Up Winner

Recipe Courtesy of Zachary from San Antonio, TX, who says "This light and crispy appetizer is great for any event. You can make them how the recipe follows or in even smaller puff pastry shells. It brings both a Southwestern and Italian flair."

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 1 package puff pastry shells
  • 2 chicken breasts
  • Canola oil (or substitute)
  • 2 tsp. garlic
  • 2 tsp. oregano
  • Salt and pepper to taste
  • 1 Hass Avocado
  • 1/4 red onion
  • 1/3 serrano chile pepper
  • 1 Tbsp. cilantro in a bowl
  • 1 lime, juiced
  • 2 tsp. honey

Instructions:

  1. Bake at 350 degrees F, 2 chicken breasts with canola oil, 2 tsp. garlic, 2 tsp. oregano, salt and pepper. Cook to internal Temp. 165 degrees F. Let the chicken cool and then dice small. Then bake the puff pastry shells until golden brown and let cool. Then dice small 1 Hass Avocado, 1/4 red onion, 1/3 serrano chile pepper and 1 Tbsp. cilantro in a bowl. Add 1 juiced Lime, 2 tsp. honey, salt and pepper to taste. Fill the pastries with chicken and then top them with avocado relish and diced tomato. Enjoy!
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
