Ingredients:
- 1 Hass Avocado
- 1/2 lime
- Crumbled Feta cheese – fill 1/2 empty avocado shell. (approximately 1/2 cup)
- 1 Grape tomato
Instructions:
- Cut avocado in half (length wise). Save shells.
- Scoop out avocado (discard pit)
- Smash the avocado. Squeeze juice of 1/2 lime onto avocado and mix together.
- Generously fill one half of empty avocado shell with crumbled feta cheese and pour into avocado mixture. Gently stir together. Scoop mixture into empty shells. Garnish with grape tomato.
*Large avocados are
recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger
size avocados adjust the quantity accordingly.
