2011 Kick Off with Hass Avocados Recipe Contest – Finalist
Recipe Courtesy of Mary M. from South Carolina, who says "This avocado dessert pizza delivers the best of summer fruits perfect for the seventh inning stretch."

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 4 Hass Avocados
  • Juice of one lime
  • 1 tsp. coconut extract
  • 1/2 cup confectioner's sugar
  • 1/2 cup whipping cream
  • 1 (12-inch) refrigerated pizza crust, thin
  • 2 tsp. extra virgin olive oil
  • 1 Tbsp. sugar
  • 1 tsp. cinnamon
  • 2 cups mixed berries (raspberries, blackberries, strawberries)
  • 1 cup diced plums or peaches
  • 1/4 cup coconut flakes

Instructions:

  1. Combine avocado pulp, lime juice, coconut extract, confectioner's sugar and whipping cream in a blender or food processor. Blend until smooth. Refrigerate until ready to assemble pizza.
  2. Brush refrigerated pizza crust with olive oil. Combine granulated sugar and cinnamon and sprinkle over crust. Bake following package directions. Remove from oven and cool completely.
  3. When ready to serve, spread avocado mixture over baked and cooled crust. Top with fruit and sprinkle with coconut. Slice and serve.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
