2010 Kick Off with Hass Avocados Recipe Contest - Runner-Up Winner

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 12 hard boiled eggs
  • 2 Hass Avocados
  • 2 vine ripe tomatoes, chopped
  • 1 small jalapeño, chopped
  • 1 cup cilantro, chopped
  • 1/2 cup red onion, chopped
  • 1/2 lime, squeezed
  • Pinch of pepper
  • Pinch of salt (add more to achieve desired taste)
  • Optional: pinch of cayenne pepper
  • Optional: add your own favorite hot sauce
  • Optional: 1 Tbsp. garlic, chopped

Instructions:

  1. Remove yolk from hard boiled eggs and combine in a bowl with all ingredients above. Then top to your desire with powdered sugar, melted cheese, etc.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
