Ingredients:
- 4 burrito size flour tortillas
- 2 Hass Avocados, peeled pitted, mashed
- 1/2 cup cream cheese, softened
- 1/4 cup shredded pepper jack cheese
- 1 clove garlic, crushed
- 1/2 Tbsp. olive oil
- 1/2 Tbsp. lime juice
- 1/2 tsp. lime zest
- 1/2 tsp. chili powder
- 1 Tbsp. green salsa
- 2 Tbsp. snipped parsley
- 1/4 cup bacon bits
- garnish- pumpkin seeds
Instructions:
- With a 2 1/2 inch round cutter, cut 32 rounds from the tortillas. Press each round into a mini muffin cup. Bake at 375 degrees F for 5-10 minutes or until crisp and lightly brown around the edges of each cup. Cool. Beat together the rest of the ingredients until well blended; fill each cup then garnish with pumpkin seeds. Makes 32
*Large avocados
are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger
size avocados adjust the quantity accordingly.
