2010 Kick Off with Hass Avocados Recipe Contest - Runner-Up Winner

Recipe Courtesy of Melissa from Arlington, VA, who says "Foley Family French Fried Avocado: Light, Crispy on the outside and Creamy on the inside."

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • Olive oil for frying
  • 1/4 cup wheat flour (if you do not have wheat flour regular flour is okay but not as tasty)
  • 1 tsp. sea salt
  • 5 oz. of egg substitute
  • 1 1/4 cups Panko (Japanese bread crumbs) Panko is made from wheat bread, but it has a crisper, airier texture than most types of breading found in Western cuisine. In a pinch, you can use regular bread crumbs, but the texture will be slightly different
  • 2 firm-ripe medium Hass Avocados, pitted, peeled, and sliced into 1/2-in.
  • Blue Cheese

Instructions:

  1. Coat individual avocado slices in the wheat flour, then dip each in the egg substitute and coat with the breadcrumbs. Fry the pieces in the olive oil or brush with olive oil and bake at 425 degrees F. While still hot sprinkle with sea salt and blue cheese crumbles.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
