Ingredients:
- 1 1/2 Hass Avocado, diced
- 1/2 cup yellow pepper, diced
- 1/2 cup sliced black olives
- 1/2 cup red onion, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup crumbled feta cheese
- 1 Tbsp. olive oil
- Juice of 1/2 lime
- 3 dashes of Greek seasoning
- Parsley to garnish
Instructions:
- In a bowl, combine avocados, tomatoes, yellow pepper, onion and olives. In a separate small bowl combine olive oil, seasoning and lime juice. Pour olive oil mix over veggies and toss. Top with feta cheese and parsley. Enjoy!
*Large avocados are recommended for this recipe. A large avocado averages about 8
ounces. If using smaller or larger size avocados adjust the quantity accordingly.
