2011 Kick Off with Hass Avocados Recipe Contest – Finalist

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 1 small bunch of kale (stems removed & cut into shreds)
  • 4 of your favorite brand of soft tortillas (or pre-made tostadas)
  • 1 tsp. olive oil
  • 1 can of black beans rinsed and drained
  • 1 pkg. salsa
  • 1 Hass Avocado
  • Shredded cheddar cheese
  • Salt and pepper to taste

Instructions:

  1. Heat oven to 450 degrees F.
  2. Place 4 soft round tortillas directly on baking sheet for 10 minutes, turning over once halfway through.
  3. While the tortillas are cooking get all of your shredded kale (about 4 big handfuls) and season with a bit of salt and pepper and a tsp. of olive oil.
  4. You want to massage the oil, salt and pepper into the kale.
  5. Keep mixing with your hands until all of the kale is evenly coated.
  6. Once your tortillas are a nice golden brown color remove from oven and allow to cool.
  7. Take the black beans and smoosh them a bit with the back of a spoon so that you are able to spread them easily and evenly onto each tostada

To assemble your Krunchy Kale Tostada's you do as follows:

  1. Take 1 tostada and smear a heaping tsp. full of smooshed black beans;
  2. Take a tsp. of your favorite salsa and apply that next;
  3. Then take a large handful of your massaged kale and place that next;
  4. Take a handful of some shredded cheddar cheese and sprinkle generously all over your tostada.
  5. Finally top it off with some thinly sliced Hass Avocado.
  6. Enjoy!
Serving Suggestions:
Tip: If you are "krunched" for time you can buy already made tostadas that are golden brown and crunchy at your local Mexican specialty food store.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
