2011 Kick Off with Hass Avocados Recipe Contest – Finalist
Recipe Courtesy of Karen Q. from Florida, who says "Cheer your team on with Pigskin Panini! Avocados paired with bacon, tomato and mozzarella score the game winning touchdown by bringing in their special team sauce; a combo of ranch dressing and spicy chili sauce! These cheesy, tangy, crunchy and satisfying sandwiches have been a hit with my family for years!"

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 4 Hass Avocados
  • 16 slices bacon
  • 4 tomatoes
  • 16 oz. mozzarella cheese
  • 4 Tbsp. butter melted
  • 1 cup ranch dressing
  • 3-5 Tbsp. chili sauce (3 Tbsp. if you do not like it hot, 5 if you do)
  • 3 Round loaves unsliced crusty country French bread

Instructions:

  1. In a large sauté pan cook bacon over medium heat turning once, until crisp
  2. While bacon is cooking:
    Cut mozzarella into 16 round slices
    Slice bread into 16 equal slices about 1-inch thick each
    Mix together ranch dressing and chili sauce and set aside
    Cut tomatoes into 16 equal slices
    Cut avocados in half, remove pits and skin then slice
  3. When bacon is cooked remove from pan and drain on paper towels.
  4. To build your Panini:
    Spread each slice of bread with special team sauce
    Layer 8 slices of bread with mozzarella, tomatoes, bacon and avocado
    Top each with one remaining slice of bread
    Brush each sandwich top with melted butter and place in heated grill, Panini or sauté pan buttered side down.
    Close Panini maker or weight down with smaller pan and grill for 5 minutes on medium heat until lightly toasted.
    Brush tops of sandwich with melted butter and flip over.
  5. Grill until toasted and cheese is melting
  6. Remove from heat, slice in half and serve.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
