Ingredients:
- 2 Hass Avocados
- 4 oz. cream cheese
- 6 Tbsp. finely chopped pineapple
- 1 tsp. lime juice
- 1 orange rind, finely grated
- 1/2 tsp. ground ginger
- 1/2 tsp. ground hot pepper
- 1 tsp. Stevia
- 1 bread loaf
Instructions:
- Mash avocados & cream cheese. Mix in pineapple, lime juice, orange rind. Combine ginger, hot pepper, Stevia and add to avocado mixture. Stir until smooth. Refrigerate 2 hours. Trim bread crust. Frost one bread slice with avocado mixture. Sandwich second bread slice over frosted slice. Frost 1/2 top slice. Grasp frosted end of sandwich-rotate forward, tucking bread under until solid tube is formed. Fasten tube with toothpick, wrap and freeze. Thaw 1 hr. Slice: Pinwheels!
*Large avocados are recommended for this
recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the
quantity accordingly.
