Recipe Courtesy of Bridget C. from California, who says "My goal was to create easy, delicious, tailgating finger food embracing Hass Avocados and giving tribute to the bowl games, so what better way than create a roll that looks like a rose bud with some rose petal jam that is a touchdown for a salty/sweet fan!"

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 2 Hass Avocados, sliced thin
  • 1 Hass Avocado, diced
  • 1 clove garlic, minced
  • 2 egg yolks
  • 2 tsp. Dijon mustard
  • 1 tsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. ground black peppercorn
  • 1/8 tsp. cayenne pepper
  • 1/2 cup extra virgin olive oil
  • 2 Tbsps. Rose petal jam
  • 1 lb. maple roasted deli ham, sliced thin
  • 12 tomato basil tortilla wraps

Instructions:

  1. First make your Avocado Aioli:
    In a food processor combine garlic clove, egg yolks, mustard, fresh lemon juice, salt, pepper, and cayenne pepper and mix for about a minute. As it thickens pour in the olive oil, keeping the machine running for another 30 seconds. Now add the diced avocado and blend until it makes a creamy aioli sauce.
  2. To assemble:
    Place a tortilla down, spread avocado aioli on 75% of it (leaving room to roll it), place down 3 or more slices of ham, spread a light coating of rose jam on the ham then place a row of sliced avocado in the middle of the tortilla and roll it all up tightly. Now cut off the ends and discard (or snack on!) and cut the roll into 4-inch“rose buds” and repeat with the rest of your tortillas!
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
