Ingredients:
- Bow tie pasta (piccolini or farfalle)
- 1 (16 oz.) container of medium chunky salsa or homemade pico de gallo
- 1 lime, juiced
- 1 small lemon, halved
- 1/4 cup chopped cilantro
- 3 Tbsp. olive oil
- 2 large Hass Avocados
- 1 pack of guacamole seasoning or seasonings to taste
- Salt and pepper to taste
- Cilantro garnish
Instructions:
- Start with bow tie pasta (Piccolini or Farfalle) cooked per pkg. instructions, drained and cooled. Add one container (16 ounces) refrigerated medium chunky salsa or your own homemade Pico de gallo, juice from one lime and one half small lemon, 1/4 cup chopped cilantro and 3 Tbsp. of olive oil to the cooled pasta. Small dice two large Hass Avocados and in a separate bowl mix with the juice from the remaining 1/2 lemon and the pack of guacamole mix or use your own seasonings. Toss gently and then mix into the pasta. Salt and pepper to taste, garnish with the remaining cilantro.
*Large avocados are recommended for this recipe. A large avocado
averages about 8 ounces. If using smaller or larger size avocados adjust the quantity
accordingly.
