Avocado Salsa with Football Cheesy Bread

Recipe Courtesy of Linette G. from Ohio, who says "I wanted to combine a couple favorites to make a fun new savory dish that's perfect for the big game. I made a spicy cheesy bread, baked it in the shape of a football and filled it with an avocado salsa. Then added a touch of sour cream to represent the football's strings."

Ingredients:

Bread Ingredients:

  • 2 cups all-purpose flour
  • 4 tsp. baking powder
  • 1 Tbsp. sugar
  • 1/2 tsp. onion salt
  • 1/2 tsp. leaf oregano
  • 1/4 tsp. dry mustard
  • 1 1/4 cups shredded sharp cheddar cheese
  • 1 egg, well beaten
  • 1 cup milk
  • 1 Tbsp. butter, melted

Avocado Salsa Ingredients:

  • 2 Hass Avocados, chopped
  • 1 container cherry tomatoes, chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 3 cloves garlic, minced
  • 1 small red onion, chopped
  • Sour cream for garnish

Instructions:

  1. Preheat your oven to 350 degrees F.
  2. Combine the flour, baking powder, sugar, garlic, cumin, and chili powder. Set aside.
  3. Combine the egg, milk and butter. Add the wet mixture all at once to dry ingredients, stirring just until completely moistened.
  4. Fold in the cheese, and spread the batter in a football, or oval shaped cake pan and bake at 350 degrees F for 45 minutes.
  5. While the bread is baking, chop up all the ingredients for the avocado salsa, squeeze the lime over the top, and toss them together in a bowl.
  6. When the bread is done cooking, remove it from the oven, turn it out of the pan onto a cooling rack and let it cool for a few minutes.
  7. Scoop out the center of the bread with a knife and set it aside.
  8. Add the avocado salsa to the hole you made, then use a plastic bag with a small hole cut in the corner to pipe sour cream strings for your football.
  9. Serve with the cut out chunks of bread, and corn chips around the outside.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
