Avocado Salsa with Football Cheesy Bread

I made a spicy cheesy bread, baked it in the shape of a football and filled it with an avocado salsa. Then added a touch of sour cream to represent the football's strings."

Ingredients:
Bread Ingredients:
- 2 cups all-purpose flour
- 4 tsp. baking powder
- 1 Tbsp. sugar
- 1/2 tsp. onion salt
- 1/2 tsp. leaf oregano
- 1/4 tsp. dry mustard
- 1 1/4 cups shredded sharp cheddar cheese
- 1 egg, well beaten
- 1 cup milk
- 1 Tbsp. butter, melted
Avocado Salsa Ingredients:
- 2 Hass Avocados, chopped
- 1 container cherry tomatoes, chopped
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 3 cloves garlic, minced
- 1 small red onion, chopped
- Sour cream for garnish
Instructions:
- Preheat your oven to 350 degrees F.
- Combine the flour, baking powder, sugar, garlic, cumin, and chili powder. Set aside.
- Combine the egg, milk and butter. Add the wet mixture all at once to dry ingredients, stirring just until completely moistened.
- Fold in the cheese, and spread the batter in a football, or oval shaped cake pan and bake at 350 degrees F for 45 minutes.
- While the bread is baking, chop up all the ingredients for the avocado salsa, squeeze the lime over the top, and toss them together in a bowl.
- When the bread is done cooking, remove it from the oven, turn it out of the pan onto a cooling rack and let it cool for a few minutes.
- Scoop out the center of the bread with a knife and set it aside.
- Add the avocado salsa to the hole you made, then use a plastic bag with a small hole cut in the corner to pipe sour cream strings for your football.
- Serve with the cut out chunks of bread, and corn chips around the outside.
*Large avocados are
recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger
size avocados adjust the quantity accordingly.
