2010 Kick Off with Hass Avocados Recipe Contest - Runner-Up Winner

Recipe Courtesy of Patricia from Stanford, MT, who says "This recipe takes 30 minutes and is just 4 easy steps! Each avocado serves two people."

This recipe was submitted by a Hass Avocado fan and has not been tested by the Hass Avocado Board.
Ingredients:
  • 2 Hass Avocados
  • Dash of lemon juice
  • Salt and pepper to taste
  • 1/2 cup finely chopped brazil nuts
  • 1/2 cup cheddar cheese, grated
  • 2 Tbsp. Parmesan cheese
  • 1 Tbsp. freshly chopped parsley
  • 2 tomatoes, skinned and finely chopped
  • 1 package of whole wheat breadcrumbs
  • 2 Tbsp. melted butter
  • Paprika to taste

Instructions:

  1. Halve the avocados, remove fruit from the skins and brush insides with lemon juice.
  2. Dice avocado in bowl, sprinkle lemon juice & add all ingredients except breadcrumbs, butter & paprika.
  3. Spoon into shells, add breadcrumbs on top and drizzle with butter, and then paprika.
  4. Bake at 400 degrees F for 15 min.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
