Ingredients:
- 2 Hass Avocados
- Dash of lemon juice
- Salt and pepper to taste
- 1/2 cup finely chopped brazil nuts
- 1/2 cup cheddar cheese, grated
- 2 Tbsp. Parmesan cheese
- 1 Tbsp. freshly chopped parsley
- 2 tomatoes, skinned and finely chopped
- 1 package of whole wheat breadcrumbs
- 2 Tbsp. melted butter
- Paprika to taste
Instructions:
- Halve the avocados, remove fruit from the skins and brush insides with lemon juice.
- Dice avocado in bowl, sprinkle lemon juice & add all ingredients except breadcrumbs, butter & paprika.
- Spoon into shells, add breadcrumbs on top and drizzle with butter, and then paprika.
- Bake at 400 degrees F for 15 min.
*Large avocados are recommended for this
recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the
quantity accordingly.
