We make this soup after every home game. It is quick, hearty, savory, delicious, and feeds a crowd. It is especially good topped with Hass Avocados. Ingredients:
- 1 lb. lean ground hamburger, browned
- 1 onion, chopped fine
- 2 (15-oz.) cans petite diced tomatoes with lime and cilantro
- 1 (15- oz.) can petite diced tomatoes with chipotle chiles.
- 1 (15-oz.) can tomato sauce
- 1 (15-oz.) can black beans (undrained)
- 1 (15-oz.) can kidney beans (undrained)
- 3 cups water
- 1 (1.25-oz.) taco seasoning mix
- 1 Tbsp. canola oil (for sautéing onion)
Toppings:
- 4 Hass Avocados, peeled and sliced
- 2 cups Colby Jack cheese, shredded
- 1 pkg. yellow corn tortilla chips
- 1 bunch cilantro sprigs
- 1 cup sour cream
Instructions:
- In skillet, heat canola oil. Add onion and sauté until soft and translucent (about 3 minutes. Transfer to large stock pot.
- In same skillet, brown hamburger. Transfer meat to large stock pot. In stock pot, add canned tomatoes, tomato sauce, beans, taco seasoning, and water. Cook for 15 minutes on medium heat.
- Divide into 12 bowls and top with Hass Avocado slices, shredded cheese, a tablespoon of sour cream, tortilla chips, and cilantro sprig.
*Large
avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller
or larger size avocados adjust the quantity accordingly.
