Hass Avocado Board and Jay "The Tailgate Guy" DiEugenio Dish Up Distinctive Dishes to Kick Off Fall Sports Season

Game Time Menus Get Creative with Hass Avocados

IRVINE, Calif. (August 25, 2011) – With professional football fans all across America breathing a collective sigh of relief, professional football preseason kicked off earlier this month, signaling the official start of fall sports and with it, game day entertaining. Whether cheering on your favorite team from your living room or on the blacktop at your hometown stadium, one of the biggest decisions you’ll have to make is what dish to bring to the party. To help with all your tailgating needs, the Hass Avocado Board has teamed up with Jay “The Tailgate Guy” DiEugenio to offer sports fans the ultimate game time dishes featuring fresh Hass avocados.

Jay DiEugenio, cookbook author and radio talk show host is known for bringing the tailgating experience to a whole new level with fans across the country. Driving a custom tailgate bus, DiEugenio travels to professional football stadiums across the U.S., bringing his unique grilling flare to fans, and one ingredient he is never without is Hass avocados.

“Every tailgater needs his or her fuel to get them through game day,” says DiEugenio. “Hass avocados are always one of the main ingredients I like to incorporate when creating my tailgating menu. They add a delicious flavor and creamy texture, and are versatile enough to put on everything from burgers and dogs and to add to sandwiches and dips.”

Adding to their appeal, Hass avocados have more than just great flavor. The fruit adds good fats to any meal, along with nearly 20 vitamins, minerals and phytonutrients. They are cholesterol- and sodium-free, and more than 50 percent of the fruit’s fat content comes from monounsaturated fats.

To kick off the fall tailgating season, the Hass Avocado Board and DiEugenio are sharing two recipes with tailgaters across the country that are sure to be a hit. The first recipe for “Grilled Avo Bacon Skewers” combines bacon wrapped avocado and tomato, skewered and grilled to perfection, while the second, “Hass Avocado Tailgate Tacos,” features Hass avocados topped with cabbage, onion and a spicy chipotle mayonnaise.

 

Jay DiEugenio's Grilled Avo Bacon Skewers Recipe

Grilled Avo Bacon Skewers

Serves: 8

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

Ingredients

  • 2 ripe, Fresh Hass Avocados, halved
  • 4 roma tomatoes
  • 16 strips peppered bacon
  • 16 pieces of thick sliced deli turkey
  • Salt, to taste
  • Pepper, to taste
  • 16 short skewers



Instructions

  1. Take each avocado half and remove from the skin with a large spoon keeping the fruit of the avocado intact. Cut each half into quarters. Set aside.
  2. Cut each tomato into quarters and remove all the seeds. Set aside.
  3. Lay each strip of bacon flat. Fold one piece of turkey to fit on top of each bacon strip. Top the turkey slices with one piece of avocado and tomato. Season with salt and pepper, to taste.
  4. Roll the bacon and turkey around the avocado and tomato pieces tightly and skewer.  Add one roll to each skewer.
  5. Cook the skewers on a medium hot grill until the bacon is fully cooked.

Serving suggestion: Serve with ranch or creamy bleu cheese dressing for dipping.

Hass Avocado Tailgate Tacos

Hass Avocado Tailgate Tacos

Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Ingredients

  • 2 cups American Blonde Ale
  • 2 cups flour
  • 1 tsp. kosher salt
  • 1 tsp. black pepper
  • 1 tsp. granulated garlic
  • 2 ripe, Fresh Hass Avocados, peeled, seeded and quartered
  • 1/2 cup panko bread crumbs
  • 16 small corn tortillas (about 6”)
  • 1 (8-oz). bag shredded cabbage or coleslaw mix
  • 1 small red onion, diced small



Instructions

  1. Heat oil in a pan to 350 degrees F.
  2. Combine beer, flour, salt, pepper and garlic in a large bowl and mix well. Set aside.
  3. Coat each avocado quarter with panko bread crumbs.
  4. Dip the coated avocados in beer batter and drop in hot oil. Be sure to turn each avocado piece and remove from oil when the batter is golden brown. Strain avocado pieces and set aside.
  5. Heat tortillas and stack them in twos, using two tortillas for one taco.
  6. Fill each taco with two pieces of avocado and top with cabbage and onion.

Serving Suggestion: Add chipotle mayo and salsa, as desired. For all the meat lovers, try adding a strip of crispy bacon for a pop of flavor!
